JUST ONE HUNDRED YEARS AGO my grandfather, Antoine Alciatore, who was born in the
picturesque and historic old city of Marseilles, in Southern France, and who came to America as a
young man, opened the doors of Antoine's Restaurant.
ANTOINE'S has changed a good deal since those early days, but perhaps, when all is said and
done, it has changed less than this country as a whole. For when Antoine's opened, in 1840, a
great many of my grandfather's friends could remember when New Orleans was the capital of
a French province, before the Louisiana Purchase, and several of Antoine's early customers had
fought with Jackson (and, with that picturesque old pirate, Jean Lafitte) at the Battle of New
Orleans only twenty-five years before. That was of course before there were any railways to
speak of, and apart fro~ the citizens of New Orleans, most of the gourmets who made my grandfather's
success and his reputation came down by river boat or stage coach from Natchez or
Atlanta or from the old plantations of what we now know as "the Old South."
WHEN Antoine's opened, Martin Van Buren was President, the postage stamp was about to
come into use, baseball had just been played for the first time, Buffalo Bill had not yet been born,
gold had not yet been discovered in California, Abraham Lincoln was a struggling young lawyer
of 31, Texas was an independent republic, and from the Mississippi westward stretched the Great
Plains and the pony express and buffalo and hostile Indians and the wilderness.
THEN Antoine's meant, in the little metropolis that was New Orleans, a tiny oasis of cosmopolitan
atmosphere, of tradition (for the tradition of good food my grandfather brought' with him from
abroad), a bit of Old France transplanted into the busy, vigorous, rapidly changing America of
the 1840s.
WHEN Antoine's opened, the best Clarets which my grandfather could offer to his customers were
the peerless 1811s, the wines of the "Comet Year" (so called because of the comet which appeared
in France in the fall and which was supposed to have presaged Napoleon's downfall).
WE are a little old-fashioned here at Antoine's, and in no great hurry to "modernize" or "keep
abreast of times," whatever that may mean. We have been using the same menu, for luncheon and
for dinner, summer and winter, day in and day out, year in and year out, for fifty years. And
yet here is a new wine list.
THE list is new, the wines are not. Our wine cellar had to start from the beginning after Prohibition,
but at last, after seven years, we can present a list in every way worthy of our cuisine
of which we are, and we believe justly, proud.

BORDEAUX
THE BORDEAUX DISTRICT, which surrounds the city of Bordeaux and the wide estuary of
the Gironde in Southwestern France, is a pleasant, tranquil little country of rolling, vineyardcovered
hills and rather impressive, isolated houses, some ancient and some modern, which the
French call "chateaux." Almost every such house has its name, its vineyard and its wine, which
the owner bottles and sells under the name of his "chateau," especially in good years. A "chateaubottled"
wine therefore is a wine produced on one particular bit of ground, and bottled by the
owner at his home.
Most of the subdivisions of the Bordeaux district are better known than Bordeaux itself,
and these subdivisions ~ave given their names to the wines which they produce. The Medoc
stretches off to the nor:th and west of Bordeaux and produces red wine, or Claret, sometimes
called "Medoc," sometimes called, more specifically, after the particular township in which it was
made, "St. Estephe,", or "Margaux" or "St. Julien," or most specifically of all, often carrying the
label of the estate or "chateau" which produced it. Thus similarly Graves is a district south of
Bordeaux yielding red wines as well as white, which takes its name from the gravelly nature of
its soil. Sauternes is a district, as is Barsac, and both are named after villages. St. Emilion is a
town, as well as a wine, and Pomerol is a village as well as a type of Claret.
Of the white Bordeaux, Graves is the dryest, Barsac is usually medium sweet and
Sauternes sweet.
Of the red Bordeaux, the Medocs generally are rated the best, the St. Emilions and
Pomerols as somewhat softer but less distinguished, the red Graves remarkable, but in a class
by themselves.

The wines from the village of St. Estephe are the fullest-bodied of
all the Medocs.
3 MARGAUX
Like St. Estephe, Margaux is a township of the Medoc. Its wines
are light, delicate and soft.
4 ST. JULIEN
Lying between St. Estephe and Margaux, St. Julien produces wines
which are well-ba:lanced, medium bodied.
5 ST. EMILION
Some thirty miles to the east of the Medoc, the district of St.
Emilion is famous for its Clarets, soft, yet fairly full.

it that the hillside vineyard of Ausone was cultivated by the Latin

BURGUNDY
THE GREAT BURGUNDIAN VINEYARDS consist of a single hillside; for twenty-five miles
they parallel the main road a~d main railway line from Paris to Marseilles and the Riviera.
Gently sloping, less than a mile wide, cut into little holdings that stretch from the wide plain at
the foot of the hill to the forest at its crest, this Cote d'Or, or "Golden Slope" is anything but
impressive. And yet, for nearly two thousand years it has been celebrated throughout the civilized
world. The poet Petrarch wrote of the wines of Beaune; Erasmus said that he would rather drink
Burgundy than command all the armies of France, and Chambertin was the favorite wine of
Napoleon.
Fine Burgundy is neither very easy to come by, nor very cheap. Good years are the
exception rather than the rule; the vineyards are pitifully small (Romanee Conti, for example,
consists of five acres) and, alas! beautifully labeled bottles are not always what they claim to be.
Generally speaking, the best Burgundies are those· bottled by the little vignerons who own the
vineyards and cultivate the vines.
The "Burke's Peerage" of fine Burgundy reproduced on Page 10 is pretty fanciful but very
accurate none the less. It fails, however to take into consideration a whole coterie of noble wines
which, though true Burgundies, do not come from the Cote d'Or. Thus Chablis, delicate, very dry,
green-gold in color, certainly deserves a place beside Montrachet and Meursault, the best white
wines of the "Golden Slope"; and Moulin-a-Vent and other wines of the Beaujolais district to the
south are at least on a par with the lesser Beaunes and Pommards.
The white Burgundies are about the best dry white wines of France, perfect with sea
food or chicken or turkey. They include: Grand Montrachet and its satellites, Chevalier, Batard,
Pucelle, Combettes, etc.; the fine Meursaults: Charmes, Perrieres, Goutte d'Or, etc.; the great
Chablis: Clos, Vaudesir, Valmur, Grenouille, etc., and in a minor key, Pouilly, or Pouilly-Fuisse.
The great red Burgundies (and there are no better red wines in the world) come for
the most part from the northern half of the Cote d'Or, the so-called Cote de Nuits. The wines of
Cote de Beaune (Corton, Beaune, Pommard, Volnay, etc.) are softer, less big and less austere.

Produced some sixty miles farther south, the wines of the Beaujolais
district are lighter, less great and mature more rapidly than
the Burgundies proper. A pleasant table wine.

Macon is a town on the edge of the Beaujolais. A well-balanced
red wine, at its best with red meat.

The village of Pommard lies south of Beaune on the celebrated
Burgundian "Cote d'Or," or Golden Slope. Full and soft.

Only two miles separate Pommard and Volnay and their wines
have the same characteristics.

The picturesque little town of Nuits has given its name to the
Cote de Nuits; its wines in general are fine, yet big and powerful.

owner of the township of Corton, and this wine, fuller-bodied
than most of the '34s, is just beginning to come into its own.

Produced on the rolling hills to the southwest of Macon, on the
main road from Paris to the Riviera, Pouilly is one of the most
agreeable white wines in the world, dry and yet soft, light without
being thin- and here is a perfect Pouilly.
CHABLIS
The village of Chablis lies some eighty miles northwest of the
main Burgundian vineyards. Its wines are light, pale gold, extremely
dry.
MEURSAULT
Stout, sturdy and full-bodied, as befits true white Burgundies,
Meursaults in general are dry, but less austerely so than Chablis
and Montrachets.
PULIGN-Y MONTRACHET, LA PUCELLE

than the '34s, the 1935 white Burgundies are remarkable for

FROM LYON south to the old papal city of Avignon, the steep banks of the hurrying Rhone are

Estate Bottling of the Baron Le Roy de Boiseaumarie. Chateau-neuf
du Pape takes its name from the Popes who, in the 14th
Century, moved the seat of the Papacy from Rome to Avignon. The
wines produced round this picturesque village, its old crenellated
fortress still standing proud and grey above the Rhone, are very
full-bodied and as fiery as the Provenc;al sun under which they are
grown. Here is an exceptionally good one.
HERMITAGE LACHAPELLE
Estate Bottling of P. Jaboulet Aine. Produced on the steep slopes
of the Rhone Valley, Hermitage is certainly one of the best of the
lesser known wines of France- fine, sturdy; with a splendid bou-quet

MADE FROM BLACK GRAPES, as red wines are, and yet, like white wines, invariably served
chilled, vins roses, in their modest way, combine the best features of both. They go well with
almost any food; they are as pleasant and refreshing summer wines as it is possible to imagine.
Roses are made in a good many French provinces- Tavel, from the Rhone, is perhaps the most
famous, but the pale pink wines of the Beaujolais (Fleurie, Moulin-a-Vent, etc.) are at least as

LONGEST OF FRENCH RIVERS, the Loire winds its illustrious way nearly six hundred
miles through much of the loveliest countryside of France. The wines grown along its banks have
not, to tell the truth, any real family resemblance; they include the pleasant red Chinon of which
Rabelais was so fond, the Chanturgue of Auvergne, and the Muscadet which is so good with the
excellent pike of Nantes. And they also include a few which have earned a real place in the international

ALSACE
THE PALE, LIGHT, FLOWERY wines of Alsace are Rhine wines in every sense of the word.
The vineyards, from Mulhouse in the south to Strasbourg in the north, overlook the Valley of the
Rhine, and the Riesling and Traminer and Sylvaner grapes grown in the Alsatian vineyards, are
the same grapes that are grown in the vineyards of the Rheingau and Rheinhessen and the
Rheinpfalz on the other side of what is now,. unfortunately, not a frontier but a front. The wines
of Alsace have become very popular indeed in France since 1918; fresh, fragrant, delicate, they

whole Rheingau. This incomparable 1934, with a volume of bouquet
and flavor quite impossible to describe, is one of the greatest sweet
wines in the world.

is a wine made from special perfect bunches of grapes, set
aside and pressed separately at the time of the harvest. Such wines
are fuller, richer and longer lived than non-Auslese wines of the
same vineyard and year.

Original-Abfiillung of the Winzerverein, Hallgarten. The wines of

Do You KNOW
THAT THIS YEAR Antoine's Restaurant is celebrating its tOOth year of uninterrupted service
to the gourmets of.the world under three successive generations of the Alciatore family, Founder
Antoine Alciatore, Son Jules Alciatore and Grandson Roy Alciatore and present proprietor.
THAT Antoine's gallery of celebrities contains over two thousand autographs and pictures of
the distinguished visitors who have dined at Antoine's.
THAT besides the main dining room, Antoine's has 15 other dining rooms available for banquets
and private parties of 2 to 200 guests.
THAT the old fashioned W elsbach gas mantles provide the only source of heat in the main dining
room, even in the coldest of winters.
THAT the huge plate glass mirrors in the main dining room were formerly in the Grand Ball
Room of the famous old St. Louis Hotel, and were imported from France.
THAT until a few years ago, sand covered the floor in the main dining room and that saw dust
still covers the floor in Antoine's famous Mystery Room.
THAT the 1840 Room is a reproduction of an original early Antoine's private dining room and
contains oil paintings of Antoine and Mrs. Antoine Alciatore, old menus dating back to the early
1880s and old theatre programs containing Antoine's advertisements as far back as 1852, besides
the original pair of baby shoes worn by the founder of Antoine's.
THAT bus boys must serve an apprenticeship of 10 years before they are eligible to become
waiters, that the present headwaiter has been with Antoine's for 40 years.
THAT the customers' orders are taken without the aid of paper and pencil, and entirely by
memory, and it is seldom that errors or omissions occur.
THAT the Oysters a La Rockefeller at Antoine's were so named because of the extreme richness
of the sauce, because at the time the elder Rockefeller was then the richest man in the world.
THAT Pompano en Papillotte was especially created in honor of a distinguished FrenchBalloonist
who was entertained at Antoine's, the paper bag being fashioned to resemble the inflated gas
bag of a balloon. Its main purpose however is to retain the seductive flavours of the fish while
it is cooking.
THAT over -1,000,000 orders of Oysters a La Rockefeller have been served at Antoine's since 1899
when this dish was invented by Jules Alciatore, and since there are 6 oysters to an order the total
number of actua1 oysters is 6,240,000.
THAT most of the cooking is done with coal on a French Range, which range was purchased a
few years ago to replace its predecessor which had been in continuous use in the Antoine's kitchen
for over 40 years.
THAT the original Marble Mortar, hollowed out from a gigantic piece of stone is still in use at
Antoine's since the founding of the restaurant, and that over a dozen pestles made of Lignum
Vitae, the hardest known wood, have been completely worn down in all of these years, in this
same mortar.
