Some of you may remember when WINEdown
first began at Palace Cafe back in 1997. It was
such a huge hit that for space reasons, we moved
it over to the bar at Dickie Brennan's Steakhouse.
It has continued to be a popular after-work
activity for many of our good friends and
customers. So, for those of you who currently
attend and for those of you who have yet to
experience a WINEdown, we invite you to join us
for a wine or spirits social the last Monday of
every month from 5-7pm. Each month a
different vintner or distiller's product is featured
accompanied by complimentary culinary treats
from Executive Chef James Leeming.

OYSTER PAN ROAST
yields 4
INGREDIENTS
1 qt Heavy cream
1 T Butter
20 ea. Oysters, shucked
1 T Shallot, minced
1 T Rosemary, minced
1 T Parsely, chopped
4 T Breadcrumbs
METHOD
2 T Parmesan cheese
Salt and white pepper
to taste
4 ea. French bread pieces,
loz. each, cut on bias
Preheat oven to 3500
• In a 2 quart saucepan, reduce heavy
cream by 1/4 and add rosemary. Add 3 ounces of cream and
5 oysters to each of the individual skillets. Place each
skillet on the stovetop and bring to a boil. Remove from
heat. Sprinkle breadcrumbs and Parmesan cheese over each
oyster. Place a French bread crouton in center of each
skillet and place back in oven for 2 minutes. Garnish with
chopped parsley.
TO MAKE FRENCH BRfAD CROUTONS
Cut bread on a bias. Brush both sides of each piece with
melted butter; season to taste with salt and pepper. Toast
in a 3500 oven until crisp.

league ice hockey, baseball, and

the Zephyrs, and of course,

TENNESSEE WILLIAMS
literary Festival- March 22-26
The famous author not only lived and wrote in
New Orleans, he shared the locals' obsession with
food and drink, which he often notes in so many
of his writings. Now in its 14th year,
the Tennessee Williams Literary Festival
incorporates the writer's culinary obsession into
the festival itself. Not only do restaurants take
part in celebrating the festival by creating
Tennessee Williams inspired menus (see the
March issue of Food & Wine magazine to read
about Chef Gus Martin and Palace Cafe's
menu), there is also a food panel and even a
Cooks and Books event where individuals can
sample food and purchase cookbooks from some
of the city's best chefs and restaurants. We invite
you to join us at cousin Ralph's Storyville District
for this year's Cooks and Books event on
Saturday, March 25. The panel begins at lOam
followed by the tastings and signings at 11:30am.

DISTRICT
Since opening the doors of Palace Cafe on Canal
Street, we have worked with the Downtown
Development District (DDD). Begun in the 1970s
and currently lead by Executive Director Kimberly
Williamson (an accomplished leader of metro
downtowns), the DDD is a special-benefit tax
district created by the state Legislature. The
organization has not only taken a proactive
approach in combating some of the challenges
facing the neighborhood; it has also been
instrumental in developing initiatives to
encourage residents of Greater New Orleans to take
advantage of the many fun and exciting things
going on Downtown. THURSDAYS at the SQUARE
is one of those very things.
Kicking-off Thursday, April 6, THURSDAYS at
the SQUARE is an after-work, outside concert
series held every Thursday from 5 to 7:30pm at
Lafayette Square (across from Gallier Hall) featuring
live entertainment and drinks. Admission is free,
so grab your "work friends" and check out Downtown's
newest, coolest party! Afterwards, walk on
over to Palace Cafe or Dickie Brennan's
Steakhouse for dinner or appetizers.
