springform pan
To Assemble Cheesecake:
Preheat oven to 275 0
• Mix flour, cream
cheese, white and brown sugar with an
electric mixer until creamed. Add eggs one
at a time, continuously folding the mixture
on the inside of the bowl downward, using
a rubber spatula. Add egg yolks, rum, sour
cream and spices, and continue to scrape
mixture from the sides of the bowl. Bake
at 2750 in a water bath for 1 hour and 45
minutes, or until center is firm.

A CREOLE DINING TRADITION
The II Reveillon, /I a much-celebrated dining tradition in New Orleans, dates back to the
mid-1800's. This traditional Creole meal was originally celebrated twice during the holiday
season, once on Christmas Eve and again on New Year's Eve. Today the IIReveillon"
is celebrated throughout the month of December with more contemporary versions
