It started in 1998 on one weekend with Palace Cafe and has since
grown into a regional culinary event that now lasts the entire
summer. Diclde Brennan & Co. has joined forces, again, with
Mr. B's Bistro and Ralph Brennan Restaurant Group to bring
you a summer of food, wine and fun at one of the South's most
splendid and elegant resorts, Marriott's Grand Hotel. (And, in
case you haven't heard, renovations at the Grand Hotel include a
new swimming pool with a spectacular view.)
Beginning in June, every month will feature a different
Brennan family restaurant group. Each weekend of the Grand
Chefs Series will begin with a reception on Friday night and
cooking demos and wine seminars on Saturday. On Saturday
evening, chefs from the Grand Hotel and the featured
restaurant group will prepare a truly, grand feast.
Executive Chef Gus Martin from Palace Cafe and
Diclde Brennan's Steakhouse will be featured on July 27-28.
The dinner menu for Saturday includes:
Spicy Gulf Shrimp Cake served in a Louisiana tomato bisque
Housemade Duck Pastrami Salad
with mixed baby greens, red onion and roasted portobello
mushrooms tossed in a blackberry vinaigrette
Pan Seared Prime Filet Mignon served on lobster
and leek risotto topped with foie gras butter
Palace Choco1ate Pecan Brownie served with housemade vanilla
bean ice cream and finished with fudge and caramel sauces
The Grand Finale will be September 14 and 15, and chefs from

Now in its seventh year, this special has become a ING of the GRILL huge local favorite and synonymous with summer at
Palace Cafe. This year, Dickie Brennan's Steakhouse will also be offering
Temperature Lunch Specials.
It just wouldn't be Father's Day without something on the grill.
Whether it's steaks, burgers, fish, chicken, chops or kabobs, Dads
everywhere love the thrill of the grill. There's always plenty on the
grills at the Steakhouse. So, this year why not treat Dad and the whole
family to dinner at Dickie Brennan's Steakhouse on Father's Day.
No matter if he's a 12 oz. Filet, a 16 oz. Cast Iron Seared Strip or a
24 oz. Porterhouse kind of a guy, we'll make sure it's the Father's Day
he never forgets. Dickie Brennan's Steakhouse will be open for
dinner on Father's Day from 5:30-10 p.m. Palace Cafe will be open
for Jazz Brunch from 10:30 a.m.-2:30 p.m., and for dinner from

Here's how it works: From June 18 through September 7, take the high
temperature from the previous day and add a decimal point between the
two numbers, then add a zero to the end. For example, if the temperature
were 92° on Monday, the price of the Lunch Special on Tuesday would be
$9.20. Chef Gus Martin changes the specials weekly, so visit our new

feature all new bells and whistles, and offer updated information,
including recipes for many of our popular dishes ... Construction on the
new restaurant at Bourbon and Iberville Streets is moving along as
planned. We'll have more information soon, including the menu (so be
on the lookout) ... Did you know? Louis Armstrong used to buy his
sheet music in the Werlein Building, which is now the horne of
Palace Cafe. For information on the Louis Armstrong Centennial
Celebration, the Satchmo Summer Festival that will be held

to Washington D.C. for a White House briefing with President Bush and
senior administration officials on the President's proposed tax cut plan

Summer in New Orleans is hot and humid, sultry and salty, and lazy. And although you may
hear us complain every once in a while, we really wouldn't have it any other way. Summer is a
day in the French Quarter browsing through every air-conditioned antique shop on Royal Street
in hopes of cooling off enough to make it a few doors down the street on a two hour, six-block
stroll from Canal Street to St. Louis Cathedral. It's a cool, crisp salad for lunch and al fresco
dining on nights when there's a nice breeze going.
During the summer, plenty of our local produce is at its peak, and some of our best seafood is
in season. Every morning, we hold our kitchen doors open for sweet, plump blueberries from
our good friend Betty Landry's farm in Mississippi, juicy Ruston peaches, Vidalia onions, Creole
tomatoes and beautiful Louisiana soft-shell crabs. Andouille Crusted Soft-shell Crabs with Jumbo
Lump Crabmeat and Basil Risotto, Fried Green Tomatoes with a Louisiana Crawfish Ragout and
our Grilled Prime Beef Steak Salad with Hearts of Romaine and Cucumber-Red Onion Relish are
just a few of the creations born from such delights that find their way to our menus.
Seasonal specials at Palace Cafe and Dickie Brennan's Steakhouse change weekly. So, there's
always something new to try and an excuse for you to get out of the kitchen and corne
downtown to the French Quarter this summer! And for days when it's too hot to go anywhere,
try this quick, easy recipe for our Ponchatoula Strawberry and Spinach Salad.
Ingredients (Salad)
1 pint Louisiana strawberries, cleaned and quartered
1 Ib Fresh spinach, washed well, picked and dried
1/3 ( Balsamic vinaigrette
1/4 (Shoved red onion
1/2 ( (rumbled ricotta salata cheese
Kosher salt and fresh crocked block pepper to taste
Place strawberries and spinach in a large bowl and season with salt and pepper. Add balsamic
vinaigrette and lightly toss. Top each salad with shaved red onion and crumbled ricotta salata.
Ingredients (Balsamic Vinaigrette)
3 Tbls Shallots, small diced 1 tsp (racked block pepper
1 Tbls Sugar 1 tsp Kosher salt
1/2 ( Balsamic vinegar 2 ( Oil blend (80% vegetable oil, 20% olive oil)
Place all ingredients, except oil, in a large bowl and whisk well or blend in a food processor.
Gradually whisk or blend in oil.
