Dear Mr. Potter:
August 21, 1968
During my recent visit to New Orleans, I dined in your charming
restaurant two nights out of the three I was in your city. As I
told you at the time, we have been coming to New Orleans for
many years, and have always been quite disappointed in the quality
of the restaurants which apparently have gained their reputations
in days long gone by. Mrs. Fogg and I have tried to visit
every restaurant that seemed worthwhile in the New Orleans area,
and I think we have done a fair job of making the rounds. Yours
is the one exception to the restaurants that we have encountered.
The quality of your food and service is without a doubt the best
there is in New Orleans.
I particularly commend you on the service. Your waiters, and
even the buss boys, show signs of having been trained to do the
job they are suppose to do. This is another exception to the general
rule, and goes a long way to make dining more pleasant.
While there, we discussed the excellent 1966 Chablis that you were
serving. I intended to bring one of the labels home to see if my
supplier could obtain it for me here. If not too much trouble, could
you send me a label from one of the bottles of Chablis, which would
help me in ordering.
I filled out the coupon in your "News ", and am enclosing it with this
letter. Again my congratulations to you and your staff, and best
wishes for continued successful operations.

a 4-Star Rating! There are only a very few Four Star Restaurants in New
Orleans, and normally, to achieve this rating there is a two year waiting
period. An exception was made for us - we are only eight months old!

Eating out should be a genuine experience. We try to make it so at
La Boucherie Restaurant Francais. Special emphasis and care is taken in
our selection of entrees, in our development of sauces, and in the special
training of our waiters. But there is one thing more; it is that which in a
very special sense "Completes the MeaL" It is wine.
For your plea.sure and enjoyment we have brought to our restaurant
some of the most important wines produced. We are building them a
home - a wine cellar - wh ich you are welcome to visit, inspect our
wines, and sign our guest register.
One thing more: We have at La Boucherie Restaurant Francais -
The Connoisseur Club. Our membership is limited. It is for those who
enjoy tasting wine. There are many wine clubs but ours is quite different;
it affords its members a cash discount on the wine they order at dinner,
there are no dues, and a private dining room in our restaurant is for
members' use only.
If you wish further information concerning our club, fill in the
blank, detach and return.
