worked in such renowned
restaurants as Le Cirque,
Commanders Palace, the
Coyote Cafe, the Union
Sq uare Cafe and La
Caquoille. In 1995 he
founded Bistro 315 and
won Zagat's Best New
Restaurant and the Award
of Excellence and the fol-lowing
year Esquire's top 25 Best New Restaurant for
his work at II Piatto, Cucina Italiana.
He was nominated for a James Beard Award,
received four stars for each of his places by the
Albuquerque Journal, has been featured in Bon
Appetite, Esquire, Gourmet, the Times-Picayune, USA
Today, Southern Living and has been consistently
praised for his regional authenticity by a host of periodicals.
In autumn 2001, Belle Forche Criolle
Restaurant and Bar opened its doors in New
Orleans' historic French Quarter.
Today Chef Matt travels between II Piatto and Belle
Forche continually serving top quality food and
overseeing his establishments.
